Refrigeration is where most wine cellars fail, and in Florida it fails faster. We build the room the cooling system depends on — the envelope, the insulation, the housing for the equipment — and a refrigeration specialist installs and commissions the unit itself. Dragon Cellars does not sell or service cooling equipment.
The envelope does half the work
Insulation and a correctly placed vapour barrier decide whether a cooling unit ever holds temperature. High-rise units with sealed envelopes and waterfront homes with salt air need different detailing, and that detailing is built into the cellar — it is the part of refrigeration that belongs to whoever builds the room.
The room is drawn around the equipment
A cooling system needs somewhere to live, and it is far cheaper to plan that than to retrofit it. Our cellars are drawn with the equipment in mind — the Pinecrest 4 room, for instance, carries a custom technical ceiling built specifically to house the cooling equipment out of sight.
The equipment itself is a specialist's job
Dragon Cellars does not sell, install or maintain cooling units. A refrigeration specialist supplies and commissions the system, and we coordinate that work into the build so the two arrive as one finished room rather than two trades blaming each other.

- What temperature and humidity should a wine cellar hold?
- Around 55°F with roughly 70% relative humidity, held steady. Stability matters more than hitting an exact number — swings are what damage a collection.
- Does Dragon Cellars supply the cooling equipment?
- No. We design and build the cellar, and a refrigeration specialist supplies, installs and commissions the cooling system. We coordinate their work into the build and prepare the room for it — insulation, vapour barrier and the housing the equipment needs.
- Can a cooling unit be added to an existing cellar?
- Often yes, but the room has to be assessed first. If the insulation or vapour barrier is inadequate, a new unit will run constantly and still fail to hold conditions — which is a construction problem before it is an equipment one.
- How noisy are wine cellar cooling systems?
- It depends on the type. Split and ducted systems place the noisy components away from the room, which is usually the right choice when the cellar adjoins a living or dining space — and it is a decision that has to be made while the room is still being drawn.
